Method
 

Preparation
  1. Preheat your oven to 200°C (400°F). Prepare the chicken by patting it dry with paper towels.
Seasoning
  1. In a small bowl, combine olive oil, minced garlic, salt, and pepper. Rub this mixture all over the chicken.
Roasting
  1. Stuff the chicken cavity with lemon slices, rosemary, and thyme sprigs. Place the chicken in a roasting pan and roast for 5 minutes, or until cooked through and juices run clear.
Serving
  1. Remove the chicken from the oven and let it rest for a few minutes before carving and serving.

Notes

For extra crispy skin, try basting the chicken with its own juices during the last minute of cooking. Adjust herbs and spices to your preference; fresh herbs are highly recommended for the best flavor.
