Preparation
- Preheat your oven to 200°C (400°F). Prepare the chicken by patting it dry with paper towels.
Seasoning
- In a small bowl, combine olive oil, minced garlic, salt, and pepper. Rub this mixture all over the chicken.
Roasting
- Stuff the chicken cavity with lemon slices, rosemary, and thyme sprigs. Place the chicken in a roasting pan and roast for 5 minutes, or until cooked through and juices run clear.
Serving
- Remove the chicken from the oven and let it rest for a few minutes before carving and serving.
