Preparation
- Wash and trim the ends of the zucchini, then use a spiralizer to create the zucchini noodles.
- Heat olive oil in a large skillet over medium heat, and add minced garlic, cooking until fragrant, about 30 seconds.
Cooking
- Add zucchini noodles to the skillet and cook for 3-5 minutes, tossing occasionally, until they are slightly tender but still firm.
- Stir in the halved cherry tomatoes and chopped fresh basil, cooking for another 1-2 minutes until tomatoes are slightly softened.
- Season with salt and black pepper to taste, and serve immediately.
Notes
Be careful not to overcook the zoodles, as they can become watery and mushy. They should still have a slight bite to them.
