Ingredients

Main Ingredients
  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • salt to taste
  • black pepper to taste

Equipment

  • Spiralizer
  • Large Skillet
  • Tongs

Method

Preparation
  1. Wash and trim the ends of the zucchini, then use a spiralizer to create the zucchini noodles.
  2. Heat olive oil in a large skillet over medium heat, and add minced garlic, cooking until fragrant, about 30 seconds.
Cooking
  1. Add zucchini noodles to the skillet and cook for 3-5 minutes, tossing occasionally, until they are slightly tender but still firm.
  2. Stir in the halved cherry tomatoes and chopped fresh basil, cooking for another 1-2 minutes until tomatoes are slightly softened.
  3. Season with salt and black pepper to taste, and serve immediately.

Notes

Be careful not to overcook the zoodles, as they can become watery and mushy. They should still have a slight bite to them.
