Growing Eggplants
- Plant eggplant seeds or seedlings in nutrient-rich soil and ensure they receive ample sunlight.
- Water regularly, keeping the soil consistently moist, and fertilize every two weeks.
- Monitor for pests and diseases, addressing any issues promptly to ensure healthy growth.
- Harvest eggplants when they are firm, glossy, and of a suitable size, typically 6-8 inches long.
Preparing Eggplant Parmesan
- Preheat your oven to 375°F (190°C) and slice the eggplants into 1/4-inch thick rounds.
- Lightly brush eggplant slices with olive oil and bake for 15-20 minutes until tender and slightly browned.
- Spread a thin layer of marinara sauce in a baking dish, then layer with eggplant slices, mozzarella, and Parmesan cheese.
- Repeat the layers, finishing with a generous topping of mozzarella and Parmesan, and bake for 25-30 minutes until bubbly and golden brown.
- Garnish with fresh basil leaves before serving hot.
Notes
For best results, use fresh, organically grown eggplants. If you don't have a garden, select firm, glossy eggplants from your local market. Salting the eggplant slices before baking can help remove excess moisture and improve texture. Enjoy with a side salad and garlic bread.
