Method
 

Prepare the Filling
  1. Preheat oven to 400°F (200°C); in a large saucepan, melt butter and sauté onion and garlic until softened.
  2. Stir in flour, then gradually whisk in chicken broth and milk until thickened.
  3. Add cooked chicken, mixed vegetables, salt, pepper, and thyme; stir and remove from heat.
Assemble the Pie
  1. Line a 9-inch pie plate with one pie crust.
  2. Pour the chicken mixture into the crust.
  3. Top with the second pie crust, crimping the edges to seal and cutting several slits in the top.
Bake the Pot Pie
  1. Brush the top crust with beaten egg for a golden finish.
  2. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
Rest and Serve
  1. Let the pie rest for 10 minutes before slicing and serving.
  2. Optionally garnish with fresh parsley.

Notes
