Ingredients

  • 8 flour tortillas
  • 6 large eggs
  • 4 strips bacon
  • 2 medium potatoes
  • 1 cup cheddar cheese shredded
  • 1 avocado
  • 0.5 cup salsa
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tbsp vegetable oil

Method
 

Growing the Ingredients
  1. Start by dicing the potatoes into small, uniform cubes. Heat a tablespoon of vegetable oil in a large skillet over medium-high heat, then add the potatoes and cook until golden brown and tender, about 10-15 minutes.
  2. While the potatoes cook, fry the bacon in a separate pan until crispy. Remove the bacon and crumble it, setting it aside.
  3. In the same pan used for bacon, whisk the eggs with a pinch of salt and pepper. Scramble the eggs until just set, then remove from heat.
Harvesting and Assembly
  1. Warm the flour tortillas in a dry skillet or microwave until pliable.
  2. Assemble the tacos by layering scrambled eggs, cooked potatoes, crumbled bacon, and shredded cheddar cheese onto each tortilla. Garnish with sliced avocado and a dollop of salsa.

Notes

For extra flavor, try adding a dash of hot sauce or a sprinkle of fresh cilantro.
