Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Mixing
  1. In a spacious bowl, combine the diced chicken, sweet potatoes, Brussels sprouts, and red onion, then drizzle them with olive oil and toss until thoroughly coated.
Seasoning
  1. Evenly sprinkle the paprika, garlic powder, thyme, salt, and pepper over the mixture, tossing again to ensure all ingredients are well seasoned.
Roasting
  1. Spread the seasoned chicken and vegetables in a single layer on the prepared baking sheet and roast for 25-30 minutes, flipping halfway, until the chicken is cooked through and the vegetables are tender with slight caramelization.
Serving
