- Cook the pasta according to package directions until al dente; drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced chicken breast and cook until browned and cooked through; remove chicken and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant. Stir in sun-dried tomatoes and spinach, cooking until spinach wilts.
- Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese until the sauce is smooth and slightly thickened.
- Return the cooked chicken and pasta to the skillet, tossing to coat everything evenly with the creamy sauce. Season with salt and pepper to taste.
