Preparation
- Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In a separate medium bowl, whisk together milk, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Carefully stir in the boiling water until the batter is smooth and thin.
Baking
- Fill each muffin cup about two-thirds full with batter.
- Bake for 18-22 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, make sure all your ingredients are at room temperature. You can substitute buttermilk for regular milk for a tangier flavor. These cupcakes can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
