  • 2 cups Chicken breast cooked, shredded
  • 1 cup Wild rice blend
  • 6 cups Chicken broth
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 1 cup Onion diced
  • 1/4 cup Butter
  • 1/4 cup All-purpose flour
  • 2 cups Milk or half-and-half
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Fresh parsley chopped, for garnish

Method
 

Instructions
  1. Cook wild rice blend as directed and set aside.
  2. Melt butter in a large pot, then sauté carrots, celery, and onion until soft.
  3. Stir in flour and cook for one minute to make a roux.
  4. Gradually whisk in chicken broth and milk, bring to a simmer, and thicken.
  5. Add cooked chicken, wild rice, salt, and pepper, then heat for 5 minutes.
  6. Season to taste, then serve hot, garnished with parsley.

Notes

For a richer soup, use half-and-half instead of milk. You can also use leftover rotisserie chicken to save time.
