Ingredients
  

Chicken
  • 2 pounds boneless, skinless chicken breasts cut into 1-inch cubes
Marinade
  • 0.5 cup olive oil
  • 0.25 cup lemon juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
Vegetables
  • 2 bell peppers any color, cut into 1-inch pieces
  • 1 red onion cut into 1-inch pieces
  • 1 pint cherry tomatoes
  • 1 zucchini cut into 1-inch pieces

Method
 

Preparation
  1. In a medium bowl, whisk together the olive oil, lemon juice, soy sauce, honey, minced garlic, oregano, salt, and pepper to create the marinade.
  2. Add the cubed chicken to the marinade, toss to coat thoroughly, and refrigerate for at least 30 minutes, or preferably 2-4 hours, to allow the flavors to meld.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Assembly
  1. Thread the marinated chicken and cut vegetables alternately onto the skewers, ensuring not to overcrowd them for even cooking.
  2. Preheat your grill to medium-high heat (about 375-400°F).
Grilling
  1. Lightly oil the grill grates to prevent sticking, then place the assembled kabobs on the hot grill.
  2. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp.
Serving
  1. Remove the kabobs from the grill and let them rest for a few minutes before serving.
  2. Serve hot and enjoy your delicious homemade chicken kabobs!

Notes

For extra flavor, you can add a pinch of red pepper flakes to the marinade. If you don't have a grill, you can cook these kabobs in a grill pan or bake them in the oven at 400°F (200°C) for 20-25 minutes, flipping halfway through.
