- In a medium bowl, whisk together the olive oil, lemon juice, soy sauce, honey, minced garlic, oregano, salt, and pepper to create the marinade.
- Add the cubed chicken to the marinade, toss to coat thoroughly, and refrigerate for at least 30 minutes, or preferably 2-4 hours, to allow the flavors to meld.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Assembly
- Thread the marinated chicken and cut vegetables alternately onto the skewers, ensuring not to overcrowd them for even cooking.
- Preheat your grill to medium-high heat (about 375-400°F).
Grilling
- Lightly oil the grill grates to prevent sticking, then place the assembled kabobs on the hot grill.
- Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp.

Notes
