Ingredients
  

Main Ingredients
  • 1 large flour tortilla
  • 2 large eggs
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp salsa
  • 1/4 cup cooked breakfast sausage or bacon (optional)
  • 2 tbsp diced bell pepper (optional)
  • 1 tbsp diced onion (optional)
  • salt and pepper to taste

Method
 

Preparation
  1. Whisk two large eggs in a bowl with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add a small amount of oil or butter.
  3. Pour the eggs into the hot skillet and scramble until cooked through, then remove from heat.
Assembly
  1. Warm the flour tortilla in a microwave or a dry skillet until pliable.
  2. Lay the warmed tortilla flat and spread the scrambled eggs down the center.
  3. Sprinkle shredded cheese over the eggs, and if desired, add cooked sausage/bacon, bell pepper, and onion.
  4. Top with salsa, then fold in the sides of the tortilla and roll it up tightly to form a burrito.
