Ingredients
  

For the Crust
  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 0.5 cup ice water
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
For the Filling
  • 6 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 0.5 cup granulated sugar
  • 0.25 cup light brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon nutmeg
For Assembly
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon sugar (for sprinkling)

Method
 

Step 1: Prepare the Pie Crust
  1. In a large bowl, whisk together flour, sugar, and salt for the crust. Cut in the cold butter until the mixture resembles coarse crumbs, then gradually add ice water, mixing until a dough forms.
  2. Divide the dough in half, flatten each into a disc, wrap them in plastic wrap, and refrigerate for at least 30 minutes.
Step 2: Make the Apple Filling
  1. In a large bowl, combine the sliced apples with granulated sugar, brown sugar, flour, cinnamon, and nutmeg; toss gently to coat the apples evenly.
Step 3: Assemble and Bake the Pie
  1. On a lightly floured surface, roll out one dough disc into a 12-inch circle and transfer it to a 9-inch pie plate. Trim any excess dough.
  2. Pour the apple filling into the pie crust. Roll out the second dough disc and place it over the filling.
  3. Trim the top crust, crimp the edges to seal, cut a few slits in the top for venting, brush with egg wash, and sprinkle with sugar.
  4. Bake at 425°F (220°C) for 15 minutes, then reduce the oven temperature to 375°F (190°C) and bake for another 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

Notes

For best results, allow the pie to cool for at least 2-3 hours before slicing and serving. This allows the filling to set properly. You can also add a splash of lemon juice to the apple filling to prevent browning and add a touch of tartness.
