  2. Drain the hot water and immediately transfer the eggs to an ice bath for at least 5 minutes to cool completely, which helps with easier peeling.
  3. Once cooled, carefully peel the eggs under cool running water or in the ice bath, then slice each egg in half lengthwise and gently scoop out the yolks into a small bowl.
Making the Filling
  1. Mash the egg yolks thoroughly with a fork until they are fine and crumbly, ensuring no large lumps remain.
  2. Add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the mashed yolks; mix well until the mixture is smooth and creamy.
  3. Taste the filling and adjust seasonings as needed, adding more salt, pepper, or mustard to suit your preference.
Assembly and Garnish
  1. Spoon the yolk mixture into a piping bag with a star tip or a resealable plastic bag with a corner snipped off, or simply use a small spoon to fill the egg white halves.
  2. Pipe or spoon the filling evenly into each egg white half, creating an attractive mound.
  3. Garnish the deviled eggs with a sprinkle of paprika before serving; for best results, chill them for at least 30 minutes before serving.

Notes

For extra flavor, you can add a pinch of cayenne pepper to the yolk mixture. Ensure eggs are very fresh for best results, but older eggs (a week or so) are often easier to peel after hard-boiling.
