  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tbsp olive oil
For the Pasta and Sauce
  • 250 g fettuccine
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 2 cups fresh spinach
  • 0.25 cup fresh basil chopped
  • 0.25 tsp red pepper flakes optional

Method
 

Cooking Instructions
  1. Season chicken breasts with salt, pepper, paprika, and garlic powder, then cook in olive oil until golden brown and cooked through; remove from pan and set aside.
  2. Cook fettuccine according to package directions until al dente; reserve some pasta water and then drain.
  3. In the same pan, sauté minced garlic and chopped sun-dried tomatoes until fragrant.
  4. Add chicken broth and heavy cream, bringing the mixture to a simmer and stir in grated Parmesan cheese until melted and smooth.
  5. Stir in fresh spinach until wilted, then add the cooked fettuccine and sliced chicken, tossing to combine.
  6. Garnish with fresh basil and red pepper flakes if desired, then serve immediately.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before cooking. You can also add some grilled shrimp or sautéed mushrooms for variation. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
