Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9x5 inch loaf pan.
Mixing Dry Ingredients
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
Mixing Wet Ingredients
- In a separate large bowl, beat the eggs. Then, add the granulated sugar, vegetable oil, and vanilla extract, mixing until well combined.
Combining Ingredients
- Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Fold in the grated zucchini.
Baking
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Cooling
- Let the zucchini bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For an extra touch, you can add 1/2 cup of chopped walnuts or chocolate chips to the batter with the zucchini.
