  • 1.5 cups all-purpose flour
  • .5 tsp baking soda
  • .25 tsp salt
  • .75 tsp ground cinnamon
Wet Ingredients
  • 2 large eggs
  • 0.5 cup granulated sugar
  • 0.5 cup vegetable oil
  • 1 tsp vanilla extract
  • 1.5 cups grated zucchini about 2 medium zucchinis

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9x5 inch loaf pan.
Mixing Dry Ingredients
  1. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
Mixing Wet Ingredients
  1. In a separate large bowl, beat the eggs. Then, add the granulated sugar, vegetable oil, and vanilla extract, mixing until well combined.
Combining Ingredients
  1. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Fold in the grated zucchini.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
Cooling

Notes
