  • ½ cup Unsalted butter, melted
Filling
  • 2 8-oz packages Cream cheese, softened
  • 1 cup Granulated sugar
  • 2 cups Heavy cream, cold
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon zest optional
Topping
  • 2 cups Mixed berries
  • 2 tablespoons Powdered sugar

Method
 

Crust
  1. Combine graham cracker crumbs, sugar, and melted butter in a bowl, then press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
Filling
  1. Beat softened cream cheese and granulated sugar together until smooth and creamy; then, in a separate bowl, whip cold heavy cream until stiff peaks form and gently fold it into the cream cheese mixture with vanilla extract and lemon zest.
Assembly & Chill
  1. Pour the cream cheese filling over the prepared crust, smooth the top with a spatula, and refrigerate for at least 4 hours, or preferably overnight, to allow it to set.
