- In a large bowl, whisk together the cottage cheese and eggs until well combined and slightly smooth.
- Add the flour, sugar, baking powder, and vanilla extract to the wet ingredients and stir until just combined; do not overmix, as some lumps are fine.
Cooking
- Heat a non-stick skillet or griddle over medium heat and add a tablespoon of butter or oil.
- Pour approximately 1/4 cup of batter per pancake onto the hot surface, leaving some space between them.
- Cook for 2-3 minutes per side, or until golden brown and cooked through, then flip and cook the other side.
- Repeat with the remaining batter, adding more butter or oil as needed.

Notes
