  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice

  • 1 egg, beaten
  • 1 tablespoon granulated sugar (for sprinkle)

Method
 

Make the Pie Crust
  1. In a large bowl, combine flour and salt; cut in cold, cubed butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until a dough forms; divide the dough in half, flatten into discs, wrap, and chill for at least 30 minutes.
Prepare the Apple Filling
  1. In a separate large bowl, combine sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice; toss gently to coat evenly.
Assemble the Pie
  1. Preheat oven to 425°F (220°C); roll out one dough disc and carefully transfer it to a 9-inch pie plate.
  2. Pour the apple filling into the pie crust; roll out the second dough disc and place it over the filling.
  3. Trim and crimp the edges of the crust; create vents on top, brush with beaten egg, and sprinkle with sugar.
Bake the Pie
  1. Bake for 15 minutes at 425°F (220°C); reduce oven temperature to 375°F (190°C) and continue baking for 45-50 minutes, or until the crust is golden brown and apples are tender.
  2. Let the pie cool completely on a wire rack before slicing and serving.

Notes
