Sweet Potato Base
  • 3 sweet potatoes medium

  • 1/4 cup milk or heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
Pecan Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter cold, cut into cubes
  • 1 cup chopped pecans
  • 1/4 teaspoon ground cinnamon
Marshmallow Topping (Optional)
  • 2 cups miniature marshmallows

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. Peel and cut the sweet potatoes into 1-inch chunks, then boil them in a large pot of salted water until very tender, about 15-20 minutes.
Make the Sweet Potato Base
  1. Drain the cooked sweet potatoes and transfer them to a large mixing bowl; mash them until smooth with a potato masher or electric mixer.
  2. Add the melted butter, granulated sugar, milk, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes, mixing until well combined and smooth.
Prepare the Pecan Topping
  1. In a separate bowl, combine the flour, brown sugar, and ground cinnamon.
  2. Cut in the cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs, then stir in the chopped pecans.
Assemble and Bake
  1. Spread the sweet potato mixture evenly into the prepared baking dish.
  2. Sprinkle the pecan topping evenly over the sweet potato mixture, or if using, add marshmallows during the last 10 minutes of baking.
  3. Bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
Serve
  1. Remove the casserole from the oven and let it cool for a few minutes before serving warm.

Notes

For an extra golden marshmallow topping, you can briefly place the casserole under the broiler for the last minute or two, watching carefully to prevent burning.
