  • 5 apples medium-sized, firm
  • 5 wooden skewers or sticks
  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1 teaspoon red food coloring or desired color
  • 1/2 teaspoon vanilla extract

Method
 

Instructions
  1. Wash and thoroughly dry the apples, then remove stems and insert a wooden skewer into the stem end of each apple.
  2. Prepare a baking sheet by lining it with parchment paper or a silicone mat and lightly greasing it.
  3. Combine sugar, corn syrup, and water in a heavy-bottomed saucepan over medium-high heat, stirring until sugar dissolves.
  4. Once boiling, stop stirring and insert a candy thermometer; continue cooking until the mixture reaches 300-310°F (149-154°C) without stirring.
  5. Remove the saucepan from heat, immediately stir in food coloring and vanilla extract carefully.
  6. Quickly dip each apple into the hot candy mixture, tilting the pan and rotating the apple to ensure even coating, then let excess drip off.
  7. Place coated apples on the prepared baking sheet and allow them to cool completely until the candy shell hardens.

Notes

Ensure apples are very dry so the candy adheres properly. Work quickly when dipping apples as the candy hardens fast. Be extremely careful with hot sugar syrup, as it can cause severe burns.
