Preparation
- Slice the beef against the grain into thin strips and combine all marinade ingredients in a bowl.
- Add the beef to the marinade, ensuring it's fully coated, then refrigerate for at least 30 minutes, or preferably several hours.
Cooking
- Heat a large skillet or cast-iron pan over medium-high heat with a tablespoon of oil.
- Cook the marinated beef in batches for 3-5 minutes per side until browned and cooked through, then remove from the pan and set aside.
- Add sliced bell peppers and onions to the same pan and cook for 5-7 minutes until tender-crisp.
- Return the beef to the pan with the vegetables, toss to combine, and heat through for 1-2 minutes.
- Warm the tortillas according to package instructions, either in the microwave, oven, or a dry skillet.
Serving
- Serve the beef and vegetable mixture in warm tortillas, optionally with desired toppings like salsa, guacamole, sour cream, or cheese.
Notes
For extra flavor, grill the beef and vegetables instead of using a skillet. You can also add other vegetables like zucchini or corn to the fajitas.
