Preparation
- Preheat your oven to 400°F (200°C) and remove the chicken from its packaging, patting it dry thoroughly with paper towels.
- Place the chicken in a roasting pan, rub it all over with olive oil, then season generously with salt and black pepper.
- Tuck the fresh rosemary sprigs into the chicken's cavity and around the roasting pan.
Roasting
- Roast the chicken for 60-75 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Remove the chicken from the oven and let it rest for 10-15 minutes before carving to allow the juices to redistribute, ensuring a tender and moist result.
Notes
For an extra boost of flavor, you can place a halved lemon or a few garlic cloves inside the chicken cavity before roasting.
