  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried oregano
Watermelon & Feta Salad with Mint
  • 4 cups watermelon
  • 0.5 cup feta cheese crumbled
  • 0.25 cup fresh mint leaves
  • 1 tbsp balsamic glaze for drizzle

Cucumber & Tomato Salad Instructions

  1. Cook quinoa according to package directions, then spread it out to cool completely.
  2. Dice bell peppers, red onion, and cucumber into small, uniform pieces.
